Florida DBPR licensees are prohibited from letting food handlers touch ready-to-eat foods unless your business has been approved to use an Alternative Operating Procedure (AOP) like this Direct Hand Contact Operating Plan (DHCOP). Use this program to guide you through establishing necessary food safety standards and procedures to handle ready-to-eat foods with bare hands. Once complete you can submit your DHCOP with your completed application for approval by DBPR and your inspector. Business without a DBPR approved AOP must use gloves or utensils to handle ready-to-eat foods.
